  • 2 cups chopped zucchini
  • 1 cup diced bell peppers
  • 1 cup fresh spinach
  • 1 cup cooked quinoa or rice
  • 1 can (15 oz) diced tomatoes
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 cup cream or plant-based cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the chopped zucchini, bell peppers, spinach, cooked quinoa or rice, diced tomatoes, garlic powder, onion powder, salt, and pepper. Mix until well combined.
